Emerging from a historic period of change, food and beverage manufacturers, processors and distributors are reviewing their long-term plans. The industry must now determine how best to position themselves for the future.
The long-range view, according to veteran food and beverage industry consultant Brad McKay, is that we will see three broad food trends in food production that revolve around being portable, individual and sustainable. Knowing and understanding what society—and manufacturers—are trying to achieve with these trends will inform what role technology will play, he said.
