An extensive educational conference will be held in conjunction with PACK EXPO Las Vegas and will run Oct. 15-17 at the Las Vegas Convention Center. Dr. David Acheson, the FDA's assistant commissioner of food protection, will serve as the keynote speaker. His presentation will highlight the challenges the FDA faces as it tries to ensure that the U.S. food supply remains among the safest in the world. Topics he will address include an increase in the volume and complexity of imported goods, international threats such as terrorism and new foodborne diseases, and an increase over the past decade in produce consumption, especially ready-to-eat products such as bagged salads.
